Please note that Regulation 17 of the Food Hygiene (Scotland) Regulations 2006 makes it an offence to contravene or fail to comply with the requirements of EC Regulations 852/2004 and 853/2004. Regulation 4 of the General Food Regulations 2004 makes it an offence to contravene or fail to comply with the requirements of EC Regulations 178/2002.

General

1.1 There was no hot water to the wash hand basin in the staff toilet. You must ensure there is a supply of hot and cold or appropriately mixed, running water to the wash hand basin.

1.2     The storage shelves in the walk in chill were damaged and flaking and cannot be adequately cleaned. You are required to repair/renew the shelves to allow them to be thoroughly cleaned and where necessary disinfected.

1.3 The tiled wall covering in the staff toilet had several missing tiles. The wall covering requires to be renewed or repaired and left in a sound, easy to clean condition.

1.4 The window ledge in the kitchen was dirty. The window ledge requires to be thoroughly cleaned and maintained in a clean condition.

1.5 The areas underneath the stainless steel shelves in the kitchen were not clean. They are required to be thoroughly cleaned to minimise any risk of contamination of food

1.6 Although you have put in place a Food Safety Management Procedure, and documentation was available on this, staff were not carrying out the identified controls at critical points. In particular: temperature monitoring records (cooking/chilled/frozen/hot), delivery records and cleaning schedules were not up to date.


You must ensure that staff are properly trained and are aware of the controls they need to carry out.  Staff must also be supervised as necessary, so you are sure that all controls which are critical to food safety are maintained.
