Please note that Regulation 17 of the Food Hygiene (Scotland) Regulations 2006 makes it an offence to contravene or fail to comply with the requirements of EC Regulations 852/2004 and 853/2004. Regulation 4 of the General Food Regulations 2004 makes it an offence to contravene or fail to comply with the requirements of EC Regulations 178/2002.
Main Kitchen
1.1 The top of the chest freezer in the pastry area was damaged and cannot be adequately cleaned. You are required to repair/renew the freezer top to allow it to be thoroughly cleaned and where necessary disinfected.

1.2 The tiled floor covering in the pot wash area had numerous damaged/cracked tiles. You are required to renew or repair the floor covering to ensure it presents a sound easy to clean condition.

1.3 The extraction canopy was damaged and rusty in places. It was inadequately sealed at the joints and cannot be adequately cleaned. You are required to repair/renew the canopy to allow it to be thoroughly cleaned and where necessary disinfected.

I recommend that you provide and install a stainless steel or galvanised metal canopy with appropriate extractor fans and filters.
