This schedule contains contraventions and recommendations. Contraventions are items that must be addressed to ensure your compliance with the above legislation. When considering work to deal with contraventions there may be other ways of achieving compliance with the law than those I have suggested. Please note that Regulation 17 of the Food Hygiene (Scotland) Regulations 2006 makes it an offence to contravene or fail to comply with the requirements of EC Regulations 852/2004 and 853/2004. Regulation 4 of the General Food Regulations 2004 makes it an offence to contravene or fail to comply with the requirements of EC Regulations 178/2002.
General
1.1 Although you have put in place a Food Safety Management Procedure, and documentation was available on this, you were not carrying out the identified controls at critical points. In particular: Temperature Records, Cleaning Schedules, Delivery Monitoring were not up to date.
You must ensure that staff are properly trained and are aware of the controls they need to carry out. Staff must also be supervised as necessary, so you are sure that all controls which are critical to food safety are maintained.

1.2 The storage shelves in the walk in chill in the kitchen were damaged/rusty in places and cannot be adequately cleaned. You are required to repair/renew the shelves to allow them to be thoroughly cleaned and where necessary disinfected.

1.3 The wall covering in the kitchen was in poor decoration especially above the washing facilities. The wall covering requires to be redecorated and left in a sound, easy to clean condition.

1.4 At the time of inspection flour and dried ingredients were being stored in open packets. Where possible all foodstuffs should be transferred into lidded containers after opening or the packaging should be folded over and sealed to prevent contamination. This will also protect food from insects and reduce food spillage which might attract pests.
