1. Seal the open drain in the floor of the pot wash room. It is recommended a low level sink is provided for dispersing of water from floor cleaning etc, (Required).
2. The hot cabinets were found to contain food debris these should be cleaned after each service. (Required)
3. The floor behind the vegetable preparation sink had food debri on it. Clean the floor. (Required)
4. The Cryptopeerless planetary mixer and suround had not been cleaned after use, food splash was noted on the mixer and surounding surface. Clean equiptment after use. (Required)
5. All carbonised baking trays should be replaced as soon as possible as they can not be readily cleaned. Also any badly damaged trays should be replaced.
