Food safety management and CookSafe

Food safety legislation requires all food businesses, including caterers, to develop and apply a Food Safety Management System (FSMS) to their business.

A Food Safety Management System:

  • controls food safety hazards to ensure the food is safe
  • builds on the everyday awareness of the business owner.
  • helps to generate practices that encourage safe food production
  • gives peace of mind to the business owners

This is based on the principles of Hazard Analysis and Critical Control Point.

CookSafe

CookSafe is an open FSMS that has been developed by Food Standards Scotland.

It is a guidance manual which will enable you to control food safety and build upon your existing good practice within your catering business.

CookSafe Records Booklet

To assist with FSMS record keeping, we have a CookSafe Records Booklet that contains the core requirements for routine checks in a single package. 

To avoid the inconvenience of single sheets, these have been combined in an easy-to-use, durable A4 spiral-bound booklet with wipe-clean covers, which consists of one week per page records, containing:

  • delivery checks
  • cold temperature checks
  • cooking temperature checks
  • cooling temperature checks
  • hot holding temperature checks
  • reheating temperature checks

The booklet also includes:

  • protect your business from E.coli O157 guidance
  • monthly probe thermometer checks
  • review records (6 monthly reminders)

The booklet covers an entire year of records.

The booklet costs £13.33 plus VAT.
